Carrots are rich in beta-carotene, vitamin K1, potassium, and antioxidants. They are also rich source of fiber with low in calories. While you can certainly get benefits of carrots by eating raw or adding to your salad, you can also include carrots in your diet by making a sweet with them. Carrot Halwa can be made with little effort and fewer ingredients.
Carrot Halwa (Gajar ka Halwa)
An easy to make carrot sweet that can be served warm or chilled to serve over a week.
Equipment
- 1 Frying pan
Ingredients
- 2 pounds Carrots Remove skin and grate coarsely like spaghetti noodles
- 2 tablespoon Ghee aka Clarified butter
- 1 cup Condensed Milk can be substituted with whole milk
- 1/2 cup Golden raisins soak in water for 15 mins
- 1/2 cup cashews lightly roast them in ghee
- 1 teaspoon cardamom powder to make powder, remove skin and grind seeds
Instructions
- Ona medium heat, add Ghee and heat till liquid. Add grated carrots and gently mix until the ghee is coated on the carrots. Continue to cook for 20 mins while mixing occasionally. Add sugar and stir gently and cook for another 10 mins.
- Add condensed or whole milk and cook for another 20 mins with occasionally stirring.
- Add cashews that are lightly roasted in ghee, raisins and cardamon powder to the mix and cook for another 10 mins
- Turn off the heat and cover the mixture. Let sit for 15 mins before serving so the flavors are infused
