Ingredients
2poundsCarrotsRemove skin and grate coarsely like spaghetti noodles
2tablespoonGheeaka Clarified butter
1cupCondensed Milkcan be substituted with whole milk
1/2cupGolden raisinssoak in water for 15 mins
1/2cupcashewslightly roast them in ghee
1teaspooncardamom powderto make powder, remove skin and grind seeds
Instructions
Ona medium heat, add Ghee and heat till liquid. Add grated carrots and gently mix until the ghee is coated on the carrots. Continue to cook for 20 mins while mixing occasionally. Add sugar and stir gently and cook for another 10 mins.
Add condensed or whole milk and cook for another 20 mins with occasionally stirring.
Add cashews that are lightly roasted in ghee, raisins and cardamon powder to the mix and cook for another 10 mins
Turn off the heat and cover the mixture. Let sit for 15 mins before serving so the flavors are infused
