Add water to 2 cups flour the day before and mix to make the dough runny. Cover the dough and let sit for overnight.
Next day you will see some bubbles formed in the dough because of fermentation. Add remaining 2 cups of flour and start mixing the dough until it is without any clumps. Add water as needed to make a batter.
Make sugar syrup by heating 4 cups Granulated Sugar in 2 cups water. Heat the syrup until it gets thick and turns the color to brownish like maple syrup.
In a frying pan heat 4 cups Vegetable oil or Canola oil at medium heat and add the batter to a thick cloth that has about a pencil thick hole. Now close the cloth and slowly add the batter to the hot oil as a drip. Roll small circles in the oil as the batter drips from the hole.
Fry Jalebi on both sides evenly with occasional turning until golden brown color.
Take off the fried Jalebi with draining off excess oil and immerse in lukewarm sugar syrup. Leave Jalebis immersed for 10 mins.
Drain the excess syrup. Serve warm Jalebis with cold milk.
